Brazilian Cheese Bread

Today we will be taking our breakfast journey below the equator. I am going to share with you how to make one of my favorite breakfast foods: pão de queijo (pown-gee-kay-zho) a.k.a. Brazilian cheese bread. This is a special recipe that came straight from my mother’s memory (who is a native of Brazil) and into this blog!

Brazilian cheese bread. This is a special recipe that came straight from my mother’s memory (who is a native of Brazil) and into this blog!
Pão
de queijo is made out of tapioca flour, which comes from the root of the
cassava plant, or yuca root. Yuca doesn’t contain any gluten, making this a gluten
free dish! Pão de queijo, however, does contain milk, cheese, and eggs. If you
want to try a vegan version of this recipe, try using the v substitute products suggested below.
Ingredients:
- 1/2 cup olive oil
- 1/3 cup water
- 1/3 cup milk (v substitute: any plant based milk)
- 1 tsp salt
- 2 cups tapioca flour
- Parmesan cheese to taste substitute: vegan mozzarella cheese)
- 2 eggs (v substitute: flax egg - 1 tbsp golden flaxseed meal, 3 tbsp water)
- Preheat oven to 375 degrees F.
- In a large saucepan, mix together the olive oil, water, milk, and salt. Bring this mixture to a boil over medium heat.
- Remove the mixture from the heat and immediately stir in the sweet tapioca flour until its completely blended, then allow it to rest for 15 minutes.
- Add the eggs and thinly grated cheeses into the tapioca mixture. Tip: Keep in mind, most of the flavor will come from the cheese but try not to go overboard. 2/3 cup to 1 cup is sufficient.
- Knead the dough until it is well combined.
- Make small ball shaped pieces of dough and place them on a very lightly greased pan. Tip: you can freeze some in a zip lock baggie for another day.
- Bake for about 25 to 30 minutes or until the tops are golden brown.
- Let them cool for about 5 minutes and dig in! Recommended with a cup of sweet coffee 😊
As
you can see, pão de queijo has no wheat or gluten products. This recipe produces about 25 to 30 pão de queijos in about an hour of prep and cook time, and costs less than 30 dollars to make! These chewy little cheese balls are also very
filling! 3 or 4 of them and a cup of black coffee in the morning will keep me
going past lunch! With so many allergy friendly options, this is a really good recipe to satisfy the entire family.
