Pastia for Breakfast

Today I will show you how I made pastia. I saw this recipe on ABC's The Chew, and I had to try out this Italian breakfast dish. The original recipe feeds 10-12 people, so I made it to feed 5-6 people. I also made some other small adjustments. To make the dish, I used the following ingredients:
- 1/2 pound of linguine
- 1 pound of turkey bacon
- 1 yellow onion
- 6 eggs
- 1 cup of pecorino romano (grated)
- 1/4 cup of provolone
- 1/4 cup of parsley
- Parmigiano-Reggiano cheese (grated)
Directions:
- Preheat oven to 450 degrees.
- Boil the linguine 2 minutes longer than package instructions.
- Saute bacon until cooked through but not crispy for 5 minutes.
- Cook onions in the same pan with olive oil for about 5 minutes.
- Crack eggs into a large bowl and whisk them. Add the pecorino romano, provolone and parsley to the eggs.
- Put the pasta, bacon and onions into a bowl. Stir and then let it cool.

- Put dish into the oven and let it bake for 35 min.
