Pastia for Breakfast



Good Morning!

Today I will show you how I made pastia. I saw this recipe on ABC's The Chew, and I had to try out this Italian breakfast dish. The original recipe feeds 10-12 people, so I made it to feed 5-6 people. I also made some other small adjustments. To make the dish, I used the following ingredients:
  • 1/2 pound of linguine
  • 1 pound of turkey bacon
  • 1 yellow onion
  • 6 eggs
  • 1 cup of pecorino romano (grated)
  • 1/4 cup of provolone
  • 1/4 cup of parsley
  • Parmigiano-Reggiano cheese (grated)
Directions:
  1. Preheat oven to 450 degrees.
  2. Boil the linguine 2 minutes longer than package instructions.
  3. Saute bacon until cooked through but not crispy for 5 minutes.
  4. Cook onions in the same pan with olive oil for about 5 minutes.
  5. Crack eggs into a large bowl and whisk them. Add the pecorino romano, provolone and parsley to the eggs.
  6. Put the pasta, bacon and onions into a bowl. Stir and then let it cool.

  7. Poor pasta mixture into casserole dish and then poor egg mixture on the pasta.
  8. Put dish into the oven and let it bake for 35 min.
