Mexican Style Breakfast - Huevos Motuleños



¡Buenos Dias! Today I will show you how to make huevos motuleños. This dish comes from the Mexican town of Motul, located in the state, Yucatán. I saw this dish being made on ABC's The Chew and I had to try it out. This dish is delicious and not too difficult. I encourage everyone to try it.

Huevos Motuleños Recipe (serves 4 people):
  • 1/2 cup shredded queso fresco
  • 1 can of refried beans
  • 1 ripe plantain
  • 1 avocado
  • 1 egg per person
  • 1 tortilla per person
  • Olive oil
Directions:
  1. Chop half a red onion into dice.
  2. Pour some olive oil in a sauté pan. Pour the chopped onions into the saute pan. After a minute pour a can of refried beans into the sauté pan. Stir the beans with the onions
  3. While that is cooking, shred a half a cup of queso fresco.
  4. For about two to three minutes cook the beans with the onions.
  5. Pour the cheese into the pan with the beans and spread the cheese across the top of the beans
  6. Next fry the tortillas in a pan with olive oil until they are a golden brown on each side. Once they are done, place the tortillas in a pan with paper towel to get rid of the excess oil.
  7. Next cut a ripe plantain and fry them in a sauté pan. Make sure both sides are light brown.
  8. Next crack an egg in a pan with olive oil. You can add salt and pepper to the egg. Flip the egg over when it is white. After it is flipped over you can wait until the yolk is cooked through. Once you're done, place the egg on a paper towel to get rid of excess oil.
  9. Feel free to cut some avocado slices to go with this dish. 
  10. Now that everything is cooked, you can put it together! Place the beans on the tortilla, you can put the avocados on the beans or on the side. Place the egg on top and the plantains on the side.
