Quesadillas Salvadoreñas

Hello Everyone!

Today I will show you how to make Salvadorian Breakfast Cake a.k.a. Quesadillas Salvadoreñas. When you hear the word quesadilla, you probably think of a tortilla with meat, cheese, and salsa. In El Salvador, a Central American country next to Honduras and Guatemala, their quesadilla is like a small, cheesy pound cake.

Ingredients: Makes 18
  • 1 cup of rice flour
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 1 cup of softened butter
  • 1 cup sugar
  • 3 large eggs
  • 1 cup of sour cream
  • 1/2 cup of grated cheese (Cojita, parmesean, pecorino romano, etc.)
  • Sesame seeds (optional)

  1. Preheat oven to 350 degrees Fahrenheit.
  2. While the oven is preheating, whisk the rice flour, baking powder and salt together. 
  3. Using a standing mixer bowl, cream the butter with the sugar. Drop the eggs in one at a time until it is fully creamed.
  4. Beat in sour cream, cheese and rice flour mixture in the mixer bowl until a smooth batter forms.
  5. Spoon the mixture into greased muffin tins. I used PAM to grease them but butter is fine too.
  6. Bake for 15-20 min and let them cool to room temperature and enjoy!
