Hello Everyone!
Today I will show you how to make Salvadorian Breakfast Cake a.k.a. Quesadillas Salvadoreñas. When you hear the word quesadilla, you probably think of a tortilla with meat, cheese, and salsa. In El Salvador, a Central American country next to Honduras and Guatemala, their quesadilla is like a small, cheesy pound cake.

- Preheat oven to 350 degrees Fahrenheit.
- While the oven is preheating, whisk the rice flour, baking powder and salt together.
- Using a standing mixer bowl, cream the butter with the sugar. Drop the eggs in one at a time until it is fully creamed.
- Beat in sour cream, cheese and rice flour mixture in the mixer bowl until a smooth batter forms.
- Spoon the mixture into greased muffin tins. I used PAM to grease them but butter is fine too.
- Bake for 15-20 min and let them cool to room temperature and enjoy!
