Simple Persian Dish

Let me tell you, this week has been pretty hectic with Thanksgiving meal prep. I hope everyone had a wonderful Thanksgiving, filled with delicious food.
Today I will tell you guys a little recipe for this Iranian dish my fathers side of the family always made for me for breakfast. It's super simple!

Today I will tell you guys a little recipe for this Iranian dish my fathers side of the family always made for me for breakfast. It's super simple!
Ingredients:
- 1 large onion, sliced
- 1 1/2 garlic clove, dice up finely
- 1 TBSP of turmeric
- 1 1/4 fresh spinach (washed and dried)
- 1 Lemon (fresh squeezed)
- 1/2 orange (fresh squeezed)
- 2 TBSP extra Virgin olive oil
- 4 pinches of saffron (melted in 1 TBSP of hot water)
- 1/2 tsp black pepper
- 1 tsp salt
- 1 or 2 eggs
Instruction:
- Add oil to a non-stick pan once it's been heated, add the garlic and stir.
- Then add the onion until it has the golden color.
- Add turmeric and stir.
- Add the spinach to the pan (if it ends up overflowing from the pan, that is ok!) Place lid and cook for about 4 minutes
- Remove lid, add salt and juices and stir.
- Break the egg over the spinach and place lid again for a couple minutes. (depending on how you like your eggs cooked)
- Then add the saffron and the pepper
- Serve with bread of your choice :)
